Crystallized ginger, also known as candied ginger or glace ginger, is a confection made from fresh ginger rhizomes that have been cooked in sugar syrup and then coated with granulated sugar. The rhizomes of Zingiber officinale are peeled, sliced, simmered in water to soften them, then gradually infused with sugar through repeated cooking in progressively stronger sugar syrups. The result is a translucent, chewy confection with an intense, warming ginger flavor balanced by sweetness.

The final product typically contains ginger pieces with a granulated sugar exterior, ranging in color from pale golden to amber depending on the ginger variety and processing method. Some commercial preparations are dusted with additional sugar or cornstarch for texture and to prevent sticking.

Crystallized ginger is employed as both a confection and a flavoring ingredient across global cuisines. It is consumed as a standalone sweetmeat or candy, particularly in Asian cuisines where it is offered as a palate cleanser or digestive aid. In Western baking and desserts, it is chopped and incorporated into cakes, cookies, ice cream, and chocolate preparations. The ingredient also features in savory applications—finely minced crystallized ginger can accent glazes for meats, complement Asian stir-fries, or enhance fruit chutneys.
