A typical serving contains minimal fat and protein, with nutritional value concentrated in micronutrients and phytocompounds; sugar content varies significantly between 100% juice (naturally occurring) and sweetened commercial blends.

Cranberry juice is the liquid extract of the cranberry (Vaccinium macrocarpon and related species), a tart North American berry belonging to the Ericaceae family. The juice is typically produced by pressing fresh or frozen cranberries, often combined with water and sweeteners due to the fruit's naturally high acidity and astringent character. Commercial cranberry juice ranges from 100% pure juice to cocktail blends containing as little as 27% juice with added sugars and water. The juice is deep red to purple in color, with a distinctly tart, tangy flavor profile dominated by organic acids including citric and quinic acid, alongside subtle fruity and slightly bitter notes.

The concentrate form, obtained through thermal reduction, is the basis for most commercial products. Key cultivars used for juice production include Stevens, Howes, and Early Black varieties, selected for their juice yield and flavor characteristics rather than fresh market appeal.

Culinary Uses

Cranberry juice serves as both a beverage base and cooking ingredient across multiple culinary applications. It is commonly consumed as a standalone juice, mixed into cocktails (notably the cosmopolitan and cranberry vodka drinks), and incorporated into smoothie blends. In the kitchen, cranberry juice functions as a souring and flavoring agent in glazes for poultry and game, particularly turkey and duck, and reduces well into gastrique sauces. It is also used in baking and dessert preparations, including cranberry sauces, compotes, and marinades for meat dishes. The high pectin content makes it valuable in jam and jelly production, while its antimicrobial properties have driven its traditional use in preserves.
