coffee

BeveragesYear-round; coffee is a shelf-stable dried commodity available globally throughout the year, though harvest seasons vary by origin region (main harvests typically occur 6-12 months after flowering).

Coffee is a source of caffeine (95-200 mg per 8 oz cup depending on brew method) and contains beneficial antioxidants, particularly chlorogenic acid, with minimal calories when prepared without added milk or sweeteners.

About

Coffee is a beverage produced by brewing roasted and ground seeds (commonly called beans) of Coffea species, primarily Coffea arabica and Coffea robusta. Native to the Ethiopian highlands, coffee is now cultivated across tropical and subtropical regions worldwide, particularly in the "Bean Belt" between the Tropics of Cancer and Capricorn. The coffee cherry contains two seeds surrounded by layers of fruit, parchment, and mucilage. After harvesting, beans are processed through wet or dry fermentation methods, then dried, hulled, sorted, and roasted to develop characteristic flavor compounds through the Maillard reaction. Roast levels—light, medium, and dark—significantly influence the final taste profile, ranging from bright and acidic (light roasts) to full-bodied and bitter (dark roasts).

Culinary Uses

Coffee is consumed globally as a hot or cold beverage and functions as an essential ingredient in both sweet and savory applications. Beyond direct brewing, ground coffee is incorporated into desserts, sauces, rubs for meat, and chocolate preparations to enhance depth and complexity. Espresso, cold brew, Turkish coffee, and pour-over methods each produce distinct flavor extractions suited to different culinary traditions. Coffee pairs well with cream, milk alternatives, sweeteners, and spices such as cinnamon and cardamom. In cooking, espresso powder intensifies chocolate desserts, while brewed coffee serves as a base for reduction sauces accompanying beef and game.
