About

Cauliflower (Brassica oleracea var. botrytis) is a cruciferous vegetable belonging to the cabbage family, native to the Mediterranean region and domesticated in the Near East. The edible portion is the immature flowering head, or curd, composed of numerous undeveloped flower buds clustered tightly together on a central stalk. The curd is typically white, though purple, orange, and green varieties exist due to natural pigmentation differences. The flavor is mild and slightly sweet, with a subtle earthiness that becomes more pronounced when roasted or caramelized. Cauliflower has a dense, firm texture when raw that softens considerably with cooking.
