These onions develop a protective layer of dry scales that allows for extended storage. Big onions are milder in flavor than smaller, immature varieties, with a balanced sweetness and pungency that mellows considerably when cooked.

The most common large varieties include Yellow Spanish, Bermuda, and Texas Sweet types. Unlike scallions or cipollini onions, large storage onions have fully developed bulbs and are typically harvested after the foliage dies back, allowing the skins to cure.
