Heat coconut oil in a large wok or wide skillet over high heat until shimmering, about 1-2 minutes.

Add diced onion to the hot oil and stir-fry for 2-3 minutes until the edges begin to caramelize and become translucent.

Add crushed garlic and minced ginger, stirring constantly for 30 seconds to 1 minute until fragrant.

Pour in the red chilli pieces and chilli powder, stirring continuously for 1-2 minutes to bloom the spices and cook the chilli.

Add the basmati rice to the wok, breaking up any clumps with the spatula, and toss constantly for 2-3 minutes until each grain is coated with oil and the rice is heated through.

Drizzle light soy sauce and fish sauce over the rice, stirring vigorously to distribute the seasonings evenly for 1-2 minutes.

Sprinkle chicken powder, salt, and pepper over the rice and continue tossing for another 1-2 minutes until all seasonings are fully incorporated.

Add scallion pieces and toss the rice a final time for 30 seconds to combine, ensuring the heat is still on high to maintain the wok's temperature.

Transfer the spicy fried rice to a serving platter or individual bowls and serve immediately while hot.
