white onions

ProducePeak season is late summer through fall (August–October in the Northern Hemisphere), though commercially available year-round due to good storage capability.

White onions are low in calories and a good source of vitamin C, fiber, and antioxidants including quercetin; they also contain prebiotic compounds that support digestive health.

About

White onions (Allium cepa var. cepa) are a cultivar of the common bulb onion, characterized by their papery white skin and pale, translucent white flesh. Native to central Asia and domesticated for millennia, white onions are smaller and sharper in flavor compared to yellow onions, with a more pronounced pungency when raw due to higher sulfur compound concentrations. They have a firm, layered structure typical of onions, with a crisp texture when raw and a sweeter character when cooked. White onions are particularly prevalent in Latin American, Mediterranean, and Asian cuisines, where their clean, bright flavor profile is valued for fresh applications.

Culinary Uses

White onions are prized for both raw and cooked applications, though they are especially valued raw in fresh salsas, pico de gallo, ceviche, and as toppings for tacos and other Latin American dishes. When cooked, they become noticeably sweet and develop a milder flavor, making them suitable for caramelizing, grilling, or roasting. They are used in soups, stews, and curry bases across Asian cuisines, and appear frequently in Mediterranean dishes. Their sharp bite when raw and delicate sweetness when cooked make them versatile; they pair well with cilantro, lime, and chiles in fresh preparations, and complement meat and seafood-based braises and sauces.
