Superfine sugar, also known as caster sugar or baker's sugar, is a refined granulated sucrose product with extremely fine crystals measuring approximately 0.35 millimeters in diameter. Derived from sugarcane or sugar beets, superfine sugar undergoes extensive processing including juice extraction, crystallization, and grinding to achieve its characteristically small, uniform particle size. The fine granulation distinguishes it from standard granulated sugar, which has larger crystals, and from confectioners' sugar, which is a powder containing cornstarch.

This refined sweetener is chemically identical to standard granulated sugar (sucrose) and dissolves rapidly due to its increased surface area, making it particularly valuable in applications requiring quick incorporation and smooth texture.

Culinary Uses

Superfine sugar is widely employed in baking and confectionery work where rapid dissolution and smooth texture are essential.
