Add 1 teaspoon of superfine sugar to a chilled highball or Collins glass. Pour in 1 teaspoon of cold water and stir until the sugar is completely dissolved.

Fill the glass with ice cubes or cracked ice, leaving some room at the top for the remaining ingredients.

Pour 2 ounces of gin over the ice, allowing it to chill as it settles over the sugar mixture.

Gently top the drink with chilled club soda, pouring slowly down the side of the glass to preserve the carbonation.

Using a long bar spoon, give the drink a gentle stir from the bottom up just once or twice to lightly combine all ingredients without losing too much fizz.

Optionally, dust the surface of the drink lightly with freshly grated nutmeg, which is a traditional garnish for sangarees. Serve immediately.
