Sharp cheddar is a hard cheese made from cow's milk, produced through the traditional cheddar-making process involving milk coagulation, curd cutting, whey drainage, and pressing. The cheese originated in the West Country region of England, specifically in Somerset, and is characterized by a pale yellow to deep orange color depending on whether annatto (a natural colorant) has been added. The defining characteristic of sharp cheddar is its extended aging period—typically 12 months or longer—which develops a crystalline texture and pronounced, tangy flavor profile with nutty and slightly acidic notes. The longer the aging, the sharper and more complex the flavor becomes, distinguishing it from mild or medium cheddars aged for shorter periods. Sharp cheddar has a firm, crumbly texture when mature, with a higher fat content (around 32%) that contributes to its rich mouthfeel.
