This recipe came from an estate sale. I obtained it when I purchased the family collection from the Love Estate in Sachse, Texas in 1984.

Method

1
Allow the cream cheese and any other soft cheeses to come to room temperature by setting them out on the counter for about 30 minutes. This ensures smooth and easy blending.
30 minutes
2
Finely chop the green onions, using both the white and green parts, and set aside. Shred or crumble the sharp cheddar cheese if not pre-shredded.
5 minutes
3
In a large mixing bowl, combine the softened cheeses and beat together using a hand mixer or wooden spoon until smooth and well blended. Mix in any seasonings such as garlic powder, Worcestershire sauce, or hot sauce at this stage.
5 minutes
4
Fold in the shredded sharp cheddar cheese and the chopped green onions, stirring until evenly distributed throughout the mixture.
3 minutes
5
Lay a large sheet of plastic wrap on a flat surface and transfer the cheese mixture onto it. Use the plastic wrap to help shape the mixture into a compact ball by pulling the edges together and twisting tightly.
3 minutes
6
Refrigerate the wrapped cheese ball until firm and well set. Chilling for at least 2 hours or overnight is recommended for best results.

7
Before serving, unwrap the cheese ball and roll it in a coating of your choice, such as chopped pecans, extra green onions, or fresh herbs, pressing gently so the coating adheres evenly.

Place the finished cheese ball on a serving platter and surround with crackers, sliced bread, or fresh vegetables. Serve immediately or return to the refrigerator until ready to serve.
