Native to Southeast Asia, particularly Indonesia and Thailand, palm sugar is extracted by tapping the flower buds of these palms and reducing the collected sap through heating and evaporation. The resulting product is a granular, crystalline sugar with a deep amber to dark brown color and a distinctive caramel-like, complex flavor profile with subtle notes of molasses and toffee.
Unlike refined white sugar, palm sugar retains mineral content from the palm sap, including potassium, magnesium, and zinc. It typically contains 70-80% sucrose, with the remainder being fructose, glucose, and ash. The texture and appearance vary by production method—it may be sold as a solid cone, loose crystals, or as a paste.
