Orange marmalade is a citrus preserve made from Seville oranges (Citrus aurantium), sugar, and water, traditionally originating from Spain and Portugal before becoming a staple of British and European cuisine. The defining characteristic of marmalade is the presence of shredded or chunked citrus peel suspended in a translucent, gelatinous amber-to-dark brown base, a texture achieved through careful cooking and setting of the fruit's natural pectin. The bitter-sweet flavor profile—balanced between the tartness of the peel and the sweetness of the added sugar—distinguishes marmalade from other fruit preserves. Seville oranges, valued for their high pectin and acid content, are essential to traditional formulations; however, contemporary marmalades may incorporate sweet oranges, lemons, limes, or blood oranges to create variation in color and intensity.

Orange marmalade is primarily consumed as a spread for bread, toast, and pastries, particularly prevalent in British and European breakfast traditions. In baking, marmalade is used to fill cakes, tarts, and biscuits, and as a glaze for pâtisserie.
