Maraschino cherries are preserved cherries, typically derived from light or sweet cherry varieties (Prunus avium), that undergo a multi-stage processing treatment. The traditional production process involves harvesting cherries, pitting them, and then treating them with calcium salts to firm the flesh before bleaching with sulfur dioxide to remove natural pigmentation. The cherries are subsequently steeped in a sweetened brine flavored with almond extract (maraschino flavoring) or other flavorings, then dyed red (or occasionally other colors) with food-grade colorants. Modern commercial versions often employ simplified production methods and synthetic maraschino flavoring. The resulting product is glossy, artificially bright in color, and distinctly sweet with almond or vanilla notes, bearing little resemblance to fresh cherries in texture or flavor profile.

The term "maraschino" originally referred to a liqueur made from sour Marasca cherries of the Adriatic region, but modern maraschino cherries bear no botanical relation to this historical base.

Culinary Uses

Maraschino cherries function primarily as a garnish and decorative element in desserts, beverages, and cocktails rather than as a principal flavoring ingredient. They are iconic components of classic cocktails such as the Martini, Manhattan, and Daiquiri, where they serve both aesthetic and flavor functions. In pastry and dessert applications, they are used to top ice cream sundaes, decorate cakes and pastries, and garnish desserts requiring visual appeal. The bright coloration and sweet flavor make them standard garnishes for banana splits and retro American desserts. Beyond garnishing, they are sometimes folded into batters for cherry cake or combined with baked goods. Their firm, smooth texture and extreme sweetness render them unsuitable for applications requiring fresh fruit characteristics or subtle flavor integration.
