The mango (Mangifera indica) is a stone fruit native to the Indian subcontinent, belonging to the family Anacardiaceae. The fruit grows on large evergreen trees and is characterized by a single flat pit surrounded by dense, fibrous flesh that ranges in color from yellow and orange to red and green, depending on the cultivar and ripeness stage. Mango varieties exhibit remarkable diversity in size (from 150g to over 500g), shape, and flavor profile, with popular cultivars including Alphonso, Ataulfo, Kent, Tommy Atkins, and Keitt. The flesh offers a sweet, complex flavor with floral and sometimes slightly resinous notes, with texture ranging from buttery and melting (in superior cultivars) to more fibrous varieties.

Mangoes are consumed globally both as a fresh fruit and as a key ingredient in numerous culinary preparations. In South Asian cuisines, mangoes feature in curries, chutneys, pickles (particularly unripe amchur and pickled mango), and lassi beverages.
