Kidney beans (Phaseolus vulgaris) are legumes native to Central and South America, characterized by their distinctive kidney or bean-shaped appearance and deep reddish-burgundy color, though cream, black, and mottled varieties also exist. The beans have a firm, dense texture and earthy, slightly sweet flavor that intensifies when cooked. They are cultivated worldwide and rank among the most nutritionally significant legumes in human diets, valued for their high protein and fiber content.

When dried, kidney beans require soaking and extended cooking (45-60 minutes) to reach tenderness. Canned versions offer convenience with minimal texture compromise. The beans absorb surrounding flavors effectively, making them adaptable to diverse culinary preparations.

Kidney beans are foundational to numerous global cuisines, most prominently in Latin American and Caribbean cooking where they feature in rice and beans dishes, bean soups, and stews. They are essential to American Creole cuisine, particularly in red beans and rice and chili preparations.
