The jalapeño is a medium-sized chili pepper (Capsicum annuum) native to Mexico, specifically the Veracruz region. It is characterized by its elongated pod shape, typically 2-3 inches long, with smooth, thick-walled flesh that ranges from bright green when immature to deep red when fully ripe. The pepper has a distinctive fruity, grassy flavor profile with moderate heat, measuring 2,500-8,000 Scoville units, making it accessible to heat-sensitive palates while providing genuine spiciness. Jalapeños contain notable amounts of capsaicinoids responsible for their pungency, which intensifies as the pepper ripens and develops red coloration.

Key cultivars include 'Early' and 'Tam Jalapeño,' with variations in heat level and wall thickness. When smoked and dried, jalapeños are transformed into chipotles, widely used in Mexican and Southwestern cuisine. The pepper's versatility stems from its balance of heat, flavor, and manageable intensity, making it one of the most widely cultivated and commercially available chili peppers globally.

Culinary Uses

Jalapeños are central to Mexican and Southwestern cuisines, commonly used fresh, pickled, roasted, or smoked. Fresh jalapeños appear in salsas, guacamole, ceviche, and as table condiments. They are stuffed with cheese and fried in dishes like chiles rellenos, or sliced into tacos, nachos, and cornbread. Pickled jalapeños (en escabeche) are shelf-stable accompaniments to countless dishes. Roasting mellows their heat and deepens their flavor for use in soups, sauces, and grain dishes. Smoked and dried jalapeños (chipotles) provide a distinctive depth to adobo sauces, barbecue rubs, and contemporary fusion cooking.
