Green chilies are the unripe fruit of Capsicum species (primarily Capsicum annuum), harvested before reaching their mature red, yellow, or orange stage. They are characterized by a bright green color, elongated to conical shape depending on variety, and a crisp, juicy texture. The flavor profile ranges from mildly vegetal and fresh to sharply pungent, with varying levels of heat (measured in Scoville Heat Units) depending on the specific cultivar—varieties like Poblano peppers deliver moderate, fruity heat, while Thai green chilies are intensely spicy with grassy notes.

Key varieties include the Poblano (mild, broad), Jalapeño (medium heat, 2,500–8,000 SHU), Serrano (hot, thin-walled), and Thai chilies (very hot, fruity). Green chilies can be eaten fresh, roasted, or pickled, with the roasting process slightly softening their heat while concentrating their vegetal sweetness.

Culinary Uses

Green chilies are central to cuisines across Mexico, India, Southeast Asia, and the Mediterranean. In Mexican cooking, they are stuffed (chiles rellenos), roasted and peeled for salsas, or used fresh in guacamole and pico de gallo.
