Fat-free milk, also known as skim milk, is milk from which all or nearly all fat has been removed through centrifugal separation, resulting in a product containing less than 0.5% milk fat by weight. Derived from bovine dairy cattle, fat-free milk retains the protein, lactose, and water-soluble vitamins and minerals of whole milk, including calcium, phosphorus, potassium, and B vitamins, though vitamin A and D are often added to compensate for their reduced levels in the fat-separated product. The milk appears noticeably less opaque and less creamy than whole or reduced-fat varieties, with a thinner mouthfeel and more pronounced dairy tang.

Culinary Uses

Fat-free milk is primarily used as a beverage and in recipes where minimal fat content is desired, including baked goods, custards, sauces, and coffee beverages. It serves as a direct substitute in most cooking applications calling for milk, though the lack of fat can result in slightly less rich or creamy textures in certain preparations.
