Ingredients

- granulated sugar or 2 tablespoons heat-stable sugar substitute equal to¼ cup

- x 8-ounce can crushed pineapple in juice1 unitundrained

- egg substitute or 2 egg whites¼ cuplightly beaten

Preheat oven to 350°F and lightly grease an 8-inch square baking pan.

Whisk together flour, oats, sugar, baking powder, baking soda, and salt in a large bowl until evenly combined.

In a separate bowl, combine the crushed pineapple with its juice, milk, mashed banana, egg substitute, vegetable oil, and vanilla until well blended.

Pour the wet ingredients into the dry ingredients and stir until just combined; do not overmix, as some lumps are acceptable.

Transfer the batter to the prepared pan and smooth the top with a spatula.
