Extra-firm tofu is a soy-based curd made through the coagulation and pressing of soy milk, originating from China over 2,000 years ago and now widely produced throughout East Asia and the West. The production process involves soaking dried soybeans, grinding them with water to create soy milk, heating the mixture, then adding a coagulant (traditionally nigari or gypsum) to form curds. These curds are pressed in molds for extended periods under significant weight to remove maximum moisture, resulting in a dense, compact product with minimal water content. Extra-firm tofu has a slightly grainy, crumbly texture with a subtle nutty flavor and firm enough structure to hold its shape during aggressive cooking methods.
Extra-firm tofu typically contains 15-20% moisture, making it the densest commercial tofu variety. Available in both regular and silken preparations, extra-firm regular tofu has a porous structure that absorbs marinades and sauces effectively, while maintaining integrity when cut or crumbled.
