Red peppers are exceptionally rich in vitamin C (approximately 190 mg per 100 g raw fruit) and carotenoids, particularly lycopene and beta-carotene, which confer antioxidant and anti-inflammatory properties. They are also a good source of vitamin B6, folate, and dietary fiber, while remaining low in calories.

Sweet red pepper, or red bell pepper, is the mature fruit of Capsicum annuum var. annuum, a perennial herbaceous plant native to Mexico and Central America. The pepper ripens from green to red as it matures, developing increasing sweetness and a thinner, more tender skin. Red peppers have a glossy, blocky shape with thick, crunchy flesh that ranges from bright crimson to deep burgundy depending on variety and growing conditions. Unlike their unripe green counterparts, red peppers contain no capsaicin—the compound responsible for pungency—rendering them purely sweet with subtle fruity undertones and a mild, waxy flavor profile.

Culinary Uses

Sweet red peppers are among the most versatile vegetables in global cuisine, used raw in salads, slaws, and crudités, or cooked via roasting, sautéing, grilling, and braising. They form essential components in Mediterranean preparations such as Spanish romesco, Italian peperonata, and Turkish muhammara, as well as in Asian stir-fries and curries. The pepper's natural sweetness complements savory proteins (grilled meats, seafood) and pairs well with acidic elements (vinegar, tomatoes) and aromatic alliums. When roasted and peeled, red peppers develop concentrated sweetness suitable for purees, soups, and sauces; charring over flame produces a smoky depth that enhances many dishes.
