Skim milk, also called fat-free milk, is liquid dairy produced from the mammary glands of cattle that has undergone mechanical separation or centrifugal extraction to remove nearly all milk fat (less than 0.5% by weight). The process yields a translucent, pale blue-white liquid with reduced opacity compared to whole milk. Skim milk retains the lactose, casein, whey proteins, minerals, and water-soluble vitamins of whole milk while eliminating the fat-soluble vitamin A (unless fortified), cholesterol, and the rich mouthfeel associated with milk fat. Modern skim milk is typically fortified with vitamins A and D to compensate for losses during the skimming process.

The flavor profile is noticeably thinner and more watery than whole or reduced-fat milk, lacking the creamy sweetness provided by milk fat. This characteristic makes skim milk distinct in both sensory and functional applications, as fat plays a crucial role in emulsification, flavor carry, and mouthfeel in culinary preparations.

Culinary Uses

Skim milk is widely employed in baking, cooking, and beverage applications where fat reduction is desired without sacrificing protein content. Common uses include sauces (particularly in health-conscious preparations), soups, custards, and coffee beverages, though its thin consistency and lack of fat can produce less luxurious results in applications traditionally dependent on milk's emulsifying properties. It serves as the standard milk in many institutional settings, school lunches, and dietary-restricted preparations. In baking, skim milk can substitute for whole milk, though finished products may lack tenderness and richness; compensation with added fat or adjustment of hydration may be necessary.
