Mirin is a sweet Japanese cooking ingredient made from glutinous rice that has been fermented and converted into a syrupy liquid. The production process typically involves inoculating cooked glutinous rice with koji (Aspergillus oryzae), a beneficial mold that breaks down starches into sugars, then allowing it to ferment and mature over weeks or months before being pressed to extract the liquid.
There are three primary types of mirin: hon-mirin (true mirin, containing 14% alcohol and 60% sugar, made from rice koji and glutinous rice), shio-mirin (salted mirin with 1-2% salt added for preservation), and ama-zake (sweet rice drink, sometimes used as mirin substitute). Hon-mirin must be simmered briefly before use to reduce its alcohol content. The ingredient has a characteristic thick, viscous texture ranging from amber to golden brown in color, with a complex sweetness that is less cloying than simple sugar.
Culinary Uses
Mirin functions as both a sweetener and a glazing agent in Japanese cuisine, essential to the preparation of teriyaki, yakitori, and many simmered dishes. It adds subtle umami depth alongside sweetness, creating glossy, caramelized finishes on grilled and braised foods. Mirin is used in dipping sauces (tsuyu), dressings, and as a component in marinades; it pairs particularly well with soy sauce, miso, and dashi. The ingredient is also employed in sushi seasoning (sushi-zu when combined with vinegar and salt) and as a glaze for fish and poultry.
