Lime zest consists of the colored outer peel of Citrus aurantifolia or related lime species (Persian, Key, or desert limes), stripped of the bitter white pith beneath. The zest is the flavedo—the essential oil-rich outer layer containing limonene, citral, and other volatile aromatics that give limes their characteristic bright, tart fragrance. Limes are tropical citrus fruits believed to have originated in Southeast Asia, though they are now cultivated worldwide. The zest differs from lime juice in that it concentrates the aromatic oils without the acidity, offering a more complex, nuanced citrus flavor with herbal and floral notes.
