Papaya Balls
This recipe comes from a friend of mine from Trinidad. She serves these candies every Christmas.

Ingredients
- papaya1 unitpeeled and grated
- 1 teaspoon
- 2 teaspoons
- ¾ cup
- green food coloring or red food coloring1 unit
Method

Peel and grate the papaya, then measure the grated papaya to determine the amount of sugar needed (use ¾ cup sugar per cup of papaya).

Combine the grated papaya, lime zest, and lime juice in a bowl and stir well to mix.

Add the measured sugar to the papaya mixture and stir until the sugar dissolves completely and the mixture is well combined.

Add 1 drop of food coloring (green or red, depending on preference) to the mixture and stir until the color is evenly distributed throughout.

Refrigerate the mixture for at least 30 minutes to allow it to set and firm up.

Remove the mixture from the refrigerator and wet your hands slightly to prevent sticking, then scoop the mixture and roll it into balls using your palms.

Arrange the papaya balls on a serving plate and serve immediately, or store in an airtight container in the refrigerator until ready to serve.
