bailey's® irish cream

BeveragesYear-round

Baileys contains dairy cream and hence cholesterol and saturated fat; alcohol content (17% ABV) contributes empty calories with minimal nutritional benefit. The product contains added sugars from cocoa and flavorings.

About

Baileys Irish Cream is a branded liqueur-cream hybrid originating from Ireland, created in 1974 and produced by Diageo. It is an emulsified blend of Irish whiskey, cream, cocoa, and other flavorings, combining the richness of dairy cream with the warmth of spirits. The product achieves a homogeneous, shelf-stable emulsion through proprietary technology that stabilizes cream and alcohol—typically 17% ABV (34 proof)—without requiring refrigeration before opening. The resulting liquid has a smooth, pale brown color and a sweet, creamy character with subtle chocolate and vanilla notes.

Baileys represents a category of cream liqueurs that emerged in the 1970s, distinguished by their versatility across both sipping and culinary applications. While branded products are regulated differently than pure spirits, Baileys functions culinarily as both a sweetened spirit and a flavoring agent.

Culinary Uses

Baileys is employed in both beverages and dessert preparation. In mixology, it features prominently in cocktails such as the Irish Coffee (layered atop hot coffee), B-52 shots, and Baileys-based martinis, often served chilled or over ice. Culinarily, it features in tiramisu variations, chocolate desserts, coffee-based pastries, and cream-based sauces for finishing dishes. Its dual nature as both spirit and cream allows it to function as a dessert sauce, mousse ingredient, or flavor component in baked goods. The ingredient's sweetness and alcohol content require adjustment of other sweeteners in recipes.
