Shrimp Nectarine Thai Salad

Here's a recipe I found in the paper - the salad looks very elegant, but can be put together in less than 20 minutes.

Whisk together oil, lime juice, chopped mint, chopped cilantro, chopped jalapeno, and sugar in a bowl until the dressing is well combined and the sugar is dissolved.

Place the cooled pasta in a large mixing bowl and pour half of the dressing over it, tossing gently to coat evenly.

Add the chopped red onions, sliced cucumber, cooked shrimp, and sliced nectarines to the pasta and fold everything together carefully to avoid breaking the nectarines.

Arrange lettuce leaves on a serving platter or individual plates as the base for the salad.

Spoon the pasta and shrimp mixture onto the lettuce, then drizzle the remaining dressing over the top just before serving.
