Red cabbage (Brassica oleracea var. capitata f. rubra) is a cultivar of the common cabbage species, distinguished by its deep purple-red coloration derived from anthocyanin pigments. Native to the Mediterranean region and cultivated throughout Europe and Asia, red cabbage forms a dense, spherical head of tightly layered leaves. The flavor profile is slightly sweeter and less sulfurous than green cabbage, with a crisp texture when raw and a tender consistency when cooked. The distinctive color intensifies with cooking time and can shift toward blue when exposed to alkaline conditions, while acidic environments preserve or enhance the red hue.

Culinary Uses

Red cabbage is used both raw and cooked across numerous culinary traditions. Raw, it features prominently in slaws, salads, and pickled preparations, particularly in Eastern European, German, and Asian cuisines. When cooked, it is commonly braised with apples, vinegar, and spices in German-style preparations, or stir-fried in Asian cuisines. Its natural sweetness and color retention make it valuable for pickling, often using vinegar-based brines to preserve its vibrant hue. Red cabbage pairs well with vinegar, apples, caraway seeds, and warm spices, and serves both as a vegetable component and as a visually striking garnish.
