Black pepper (Piper nigrum) is the dried berry of a climbing vine native to Kerala in southwestern India, now cultivated throughout tropical regions worldwide. The unripe green berries are sun-dried until they darken and wrinkle, developing the characteristic black exterior and woody-spicy interior. The peppercorns contain piperine, an alkaloid compound responsible for their pungent, biting heat. White pepper is produced by fermenting and removing the outer hull, yielding a milder, earthier flavor. Pink peppercorns are unrelated berries from Schinus species, while green peppercorns are immature berries preserved fresh or freeze-dried. Sichuan pepper (Zanthoxylum) produces a distinct numbing sensation rather than heat.

Culinary Uses

Pepper is the most widely used spice globally, prized as both a flavor enhancer and a condiment in virtually every savory cuisine. It is traditionally applied as a finishing seasoning to soups, vegetables, meats, and sauces, and is essential to countless spice blends including garam masala, five-spice powder, and Cajun seasonings. Whole peppercorns are crushed or ground immediately before use to maximize volatile oils; they are also infused into vinegars and oils, and incorporated into charcuterie and curing mixtures. Pepper's pungency complements rich dishes, brightens acidic preparations, and acts as a bridge flavor across diverse ingredients.
