ProducePeak season is late summer through fall (August–October in the Northern Hemisphere), though storage allows availability throughout winter. Some regions with cool climates produce beets into early winter.

Beets are rich in folate, manganese, and betalains (antioxidant pigments), while the greens provide exceptional amounts of vitamins A and K along with minerals such as iron and calcium.

About

Beets (Beta vulgaris) are a root vegetable belonging to the amaranth family, native to the Mediterranean region and North Africa. The edible portion is a swollen taproot characterized by concentric rings of deep red, purple, golden, or striped pigmentation, with smooth skin and firm, dense flesh. The flavor is naturally sweet with earthy undertones, intensifying when cooked. Common varieties include 'Detroit Dark Red' (deep crimson), 'Chioggia' (red and white striped), 'Golden Beet' (yellow to orange), and 'Candy Striped' (pink and white). The nutrient-dense beet greens, while often discarded, are equally valuable for culinary purposes.

Culinary Uses

Beets are employed across numerous cuisines, from Russian borscht and Polish preparations to Middle Eastern salads and modern gastronomy. The roots are boiled, roasted, steamed, or grated raw for salads, while the greens are sautéed, braised, or blended into soups. Beets feature prominently in both hot and cold applications—served as standalone side dishes, pureed into soups, pickled for preservation, or incorporated into grain-based preparations and smoothies. Their natural sweetness pairs well with acidic elements (vinegar, citrus), earthy additions (walnuts, horseradish), and dairy preparations (goat cheese, sour cream).
