Ingredients
- (16 ounces) whole beets1 candrained

Drain the canned beets thoroughly and pat dry with paper towels, then cut them into 1/4-inch dice.

Combine the vinegar, water, sugar, and salt in a small saucepan and bring to a boil over medium-high heat, stirring occasionally to dissolve the sugar.

Add the diced beets and grated onion to the saucepan and stir well to combine.

Reduce heat to low and simmer gently for 5 minutes to allow the flavors to meld.

Remove from heat and stir in the prepared horseradish and black pepper, mixing thoroughly.
