Method

Zest the oranges, then peel and segment them, removing all white pith and collecting any juice that accumulates during segmentation.

Place the cooked rice in a large mixing bowl and fluff it gently with a fork to separate any clumps.

Add the golden raisins, chopped fresh mint leaves, and chopped walnuts to the rice.

Pour the reserved orange juice over the mixture and toss gently to distribute the liquid evenly throughout the rice.

Fold in the orange segments carefully, being gentle to avoid breaking them apart.
