Heat olive oil in a large skillet over medium-high heat for 1 minute until shimmering.

Add the peeled and deveined shrimp to the skillet and cook for 2 minutes per side until pink and cooked through.

Remove shrimp from the skillet and set aside on a clean plate.

In the same skillet, add the sliced red onion and cook for 3 minutes until softened, stirring occasionally.

Stir in the minced garlic, red pepper flakes, and dried oregano, cooking for 1 minute until fragrant.

Add the drained diced tomatoes to the skillet and stir to combine.

Pour in the cooked rice and stir well to combine all ingredients with the tomato mixture.

Return the cooked shrimp to the skillet along with the drained ripe olives and gently fold to incorporate.

Heat the pilaf for 2 minutes, stirring gently, until warmed through.

Season with salt and ground black pepper to taste.
