Cold Rice Drink (Fresco de Arroz)

Method

Heat 2 quarts of water in a large pot over medium-high heat until it reaches a boil.

Add the uncooked rice to the boiling water and stir well to prevent sticking. Reduce heat to medium and simmer until the rice is very tender, about 20 minutes.

Remove the pot from heat and let the rice mixture cool to room temperature, approximately 15 minutes.

Reserve the cooked rice and rice-infused water separately.

In a small bowl, combine the sugar, salt, ground cinnamon, and whole cloves. Stir the mixture into the rice-infused water until the sugar is completely dissolved.

Add the orange juice, pineapple juice, lemon juice, and grated orange peel to the pitcher. Stir until well combined.

Fold in the cubed pineapple gently to avoid breaking the fruit pieces.

Refrigerate the drink for at least 2 hours, or until thoroughly chilled. Remove the whole cloves before serving if desired.

Pour into glasses filled with ice and serve cold, ensuring each glass receives some of the pineapple cubes.
