ProducePeak harvest occurs in autumn (September through November in North America), though sweet potatoes are stored well and available year-round in most markets. Some regions with subtropical climates produce additional crops in spring.

About

The sweet potato (Ipomoea batatas) is a starchy root vegetable native to Central and South America, belonging to the morning glory family (Convolvulaceae). Despite their name, sweet potatoes are botanically unrelated to common potatoes (Solanum tuberosum), though they serve similar culinary functions. The tubers exhibit elongated, tapered shapes with thin, smooth skin ranging from white, yellow, orange, or purple depending on variety. The flesh interior is typically orange, yellow, or white and becomes sweeter and creamier when cooked due to enzymatic conversion of starches to sugars. Major cultivars include Beauregard (deep orange flesh, widely cultivated in North America), Jewel (moist texture, bright orange), and Okinawan (purple flesh, starchy consistency). Sweet potatoes have a mild, naturally sweet flavor with subtle notes of caramel or chestnut.

Culinary Uses

Sweet potatoes are employed globally in both savory and sweet preparations. They are baked, roasted, fried, mashed, and pureed into soups across African, Asian, and American cuisines. In the United States, they appear prominently in casseroles and pies, particularly during autumn holidays. Asian cuisines feature them in stir-fries, as candied side dishes, and as a base for noodles and starches. The greens (sweet potato leaves) are equally valued in African and Caribbean cooking, prepared as cooked greens similar to spinach. They function well in grain bowls, curries, and as a base for fries and chips. Their natural sweetness makes them suitable for both vegetable and dessert applications.
