sweet onions

ProduceSpring through fall, with peak season varying by region: Vidalia onions are available April through June, Walla Wallas July through September, and Texas 1015s September through February. Maui onions are available March through June.

Sweet onions are a good source of vitamin C, quercetin (an antioxidant flavonoid), and dietary fiber, with significantly lower sulfur content than standard onions, making them milder on the breath and digestive system.

About

Sweet onions are cultivars of Allium cepa that have been bred to contain higher sugar content and lower sulfur compounds compared to standard yellow or white onions, resulting in a milder, sweeter flavor profile. Native to onion-growing regions worldwide, major sweet onion varieties include Vidalia (Georgia, USA), Walla Walla (Washington, USA), Texas 1015, Maui (Hawaii), and Spanish Dulce varieties. These bulbs are typically larger, with thinner papery skins, and possess a higher water content than storage onions, making them more perishable but prized for their mild, almost fruity sweetness and reduced sharpness when raw.

Culinary Uses

Sweet onions are prized for raw preparations where their mild flavor and crisp texture shine, including salads, sandwiches, and crudités. They are equally valuable caramelized, where their natural sugars concentrate and develop rich, complex flavors in soups, gratins, and French onion soup. Due to their high water content, they cook down significantly. Sweet onions also excel in pickling, grilling, and as garnishes for burgers and tacos, and are featured prominently in cuisine from Spain to Hawaii, where local varieties are celebrated ingredients.

Chef Kurt Linsi's Queen of Sheba Salad

Chef Linsi serves this salad when he prepares an Ethiopian dinner, as he feels that a salad is lacking in the Ethiopian presentation. It's pretty hot too, so be careful with the hot pepper sauce and hot chilies.
