Spaghetti is a long, thin, cylindrical pasta made from durum wheat semolina and water, originating from Italy. The name derives from the Italian word "spago," meaning twine or string, referring to its characteristic slender form. Spaghetti is typically extruded through dies to achieve uniform diameter (usually 1.8–2 mm) and cut to standard lengths of approximately 25–30 cm. The pasta may be produced fresh or dried; dried spaghetti, the most common commercial form, has a lower moisture content (12–13%) and longer shelf life. Culinary spaghetti varieties include whole wheat versions, protein-enriched formulations (with added legume flours), and whole grain blends, though traditional durum wheat semolina remains the gold standard for texture and cooking properties.

Fresh spaghetti, made with eggs in some Italian regional preparations, has a softer texture and shorter cooking time compared to dried industrial pasta. The starch granules in durum wheat semolina gelatinize during cooking, creating the characteristic al dente firmness when properly cooked.

Culinary Uses

Spaghetti serves as the foundation for numerous Italian and international dishes, most notably spaghetti al pomodoro, carbonara, aglio e olio, and bolognese. Its long strands efficiently capture and hold sauces, whether oil-based, tomato-based, or cream-based preparations. The pasta is boiled in salted water until reaching the desired firmness, typically 8–12 minutes for dried spaghetti, though al dente (tender but with slight resistance) remains the preferred Italian standard.

Beyond Italian cuisine, spaghetti appears in Asian fusion dishes, cold salads, and frittatas. The cooking water, starch-rich and known as "pasta water" or "aqua di cottura," serves as an essential ingredient for emulsifying sauces and achieving proper consistency. Proper sauce-to-pasta ratios ensure coating and flavor integration rather than drowning the pasta.
