The wine is made primarily from Palomino Fino grapes, though Pedro Ximénez and Moscatel varieties contribute to certain styles. Sherry's defining characteristic is its production through the solera system, a dynamic aging process where younger wines are progressively blended with older wines in a series of oak barrels, creating complexity and consistency. The process involves fortification with neutral grape spirit to 15-20% alcohol by volume, followed by extended barrel aging—sometimes for decades—which develops the characteristic oxidized, nutty, and complex flavor profile. Styles range from bone-dry fino to lusciously sweet Pedro Ximénez, each with distinct color, aroma, and taste characteristics.
