The seeds are collected, dried, and milled to a fine powder, often with the seed coat removed to produce a lighter product. The flavor profile varies by mustard variety: white mustard is mild and slightly sweet, brown mustard is sharper and more pungent with a warming bite, and black mustard is intensely hot and acrid. The characteristic pungency develops when the seed is broken and its enzyme myrosinase reacts with glucosinolates, releasing volatile isothiocyanate compounds responsible for the distinctive nasal-clearing heat.

Culinary Uses

Mustard powder is widely used as a dry spice in spice rubs, curry blends, and seasoning mixtures across Indian, British, and European cuisines. It serves as the base for many prepared mustard condiments when mixed with liquid, vinegar, and other flavorings. In cooking, mustard powder is incorporated into sauces (particularly for ham, pork, and beef), deviled eggs, salad dressings, and cheese dishes. It functions both as a flavor enhancer and as an emulsifier, helping stabilize sauces and dressings. The powder is also used in pickling spice blends and as a component of dry rubs for grilled meats. A small amount adds depth to curries, while larger quantities deliver pronounced heat and complexity.
