macadamia nuts

About
Macadamia nuts are the seeds of trees belonging to the genus Macadamia, native to northeastern Australia. These round, hard-shelled nuts measure approximately 2-3 centimeters in diameter and possess one of the hardest shells of any edible nut, requiring specialized cracking machinery for commercial processing. The kernel within is pale ivory, buttery in texture, and characteristically rich and mild in flavor with subtle sweetness and no bitter aftertaste.
Two primary species are cultivated commercially: Macadamia integrifolia (smooth-shelled) and Macadamia tetraphylla (rough-shelled). The macadamia's emergence as a commercial crop is relatively recent, with major cultivation beginning in Hawaii in the early 20th century, though Australian Aboriginal peoples harvested wild macadamias for thousands of years.
Culinary Uses
Macadamia nuts are valued in both sweet and savory applications due to their high fat content and delicate flavor. They are commonly roasted and salted as a premium snack, incorporated whole or chopped into desserts (cookies, chocolates, cakes), and processed into macadamia nut butter or milk. In Southeast Asian and Pacific cuisine, particularly Hawaiian and Australian cookery, macadamias appear in crusted fish preparations, salads, and confections. Their buttery nature makes them suitable for nut-based sauces and oil extraction, though their high cost typically reserves them for special applications rather than everyday cooking.
