Green cabbage (Brassica oleracea var. capitata) is a cultivar of the cabbage species, distinguished by its dense, spherical head of tightly packed pale to dark green leaves. Native to the Mediterranean region and now cultivated globally, green cabbage is one of the most common cabbage varieties. The flavor is mild and slightly sweet when raw, becoming sweeter and more mellow when cooked. The leaves contain a natural waxy coating that gives them a subtle sheen. Green cabbage varieties range in size from small heads (1-2 pounds) to large specimens (3-5 pounds), with internal density and leaf texture varying by cultivar.

Culinary Uses

Green cabbage is one of the most versatile vegetables in global cuisines. It is consumed raw in coleslaw, salads, and as a crunchy accompaniment to Asian dishes; braised or stewed in European comfort foods such as cabbage soups and pottages; fermented into sauerkraut and kimchi for probiotic preservation; and shredded or sliced for stir-fries, dumplings, and spring rolls. Its neutral flavor profile and firm texture make it suitable for both quick cooking methods and prolonged braising. The outer leaves can be used as wrappers for cabbage rolls and stuffed preparations in Eastern European and Asian cuisines.
