About

Fennel seeds are the small, elongated fruits of Foeniculum vulgare, a flowering plant native to the Mediterranean region and now cultivated worldwide. The seeds are oval to slightly curved, approximately 6-10 millimeters long, with a pale yellow-green to tan color and a ridged surface. They possess a distinctive warm, slightly sweet flavor profile reminiscent of anise and licorice, derived from volatile oils including anethole and fenchone. The flavor is more subtle and herbaceous than star anise, with floral and citrus undertones.

Fennel seeds are harvested from mature seed heads by cutting the plant and allowing the seeds to dry naturally. The dried seeds are then threshed to separate the seeds from the chaff. High-quality fennel seeds should have a bright, uniform color and release a fragrant aroma when crushed.

Culinary Uses

Fennel seeds are employed as both a spice and digestive aid across numerous culinary traditions. In Indian cuisine, they are a fundamental component of spice blends such as garam masala, panch phoron (Bengali five-spice), and curry powders, and are commonly served as a mouth freshener following meals. They feature prominently in Mediterranean cooking, particularly in Italian sausages, fish dishes, and bread. In Middle Eastern and North African cuisines, fennel seeds enhance couscous, legumes, and pickled vegetables. The seeds are used whole in tempering (tadka) to release their essential oils, or toasted and ground into spice blends. They pair effectively with fish, shellfish, root vegetables, and cured meats, and can be infused into beverages or broths.
