About

Sweetened condensed milk is a shelf-stable dairy product produced by evaporating approximately 50% of the water content from whole milk and then adding sugar to the concentrate, resulting in a thick, viscous liquid with a pale caramel color. Eagle Brand, established in 1856, is the oldest and most widely recognized brand of sweetened condensed milk in North America. The product contains milk solids, milk fat, water, and added sucrose or other sweeteners, creating a smooth, homogeneous emulsion. Unlike evaporated milk, which contains no added sugar, sweetened condensed milk relies on its high sugar content as a preservative, allowing it to remain shelf-stable for extended periods without refrigeration once opened.

Culinary Uses

Sweetened condensed milk serves as a key ingredient in desserts, beverages, and confections across numerous cuisines. It is fundamental to American fudge, caramels, and candy-making, as well as to Latin American dulce de leche production. In Asian cuisines, it is commonly used in Vietnamese coffee, Thai desserts, and Filipino sweetened beverages. The ingredient functions both as a sweetener and binding agent in baked goods, pie fillings, and no-bake desserts. Its concentrated form provides moisture, texture, and sweetness simultaneously, making it particularly valuable in recipes where achieving a specific consistency and sweetness level is desired without incorporating additional liquid.
