caraway seed

Herbs & SpicesYear-round; commercially dried caraway seeds are available as a shelf-stable spice with no seasonal restriction.

Caraway seeds are rich in dietary fiber and contain essential oils with potential digestive benefits. They also provide trace minerals including iron and magnesium.

About

Caraway (Carum carvi) is a biennial flowering plant in the Apiaceae family, native to Western Asia and the Mediterranean region. The dried, ripe fruits—commonly called seeds—are small, crescent-shaped, and brown, with a distinctive warm, slightly sweet, and peppery flavor profile with subtle anise-like notes. The essential oils, particularly carvone and limonene, impart its characteristic aroma and taste. While botanically fruits, caraway seeds are treated as a spice in culinary applications.

Culinary Uses

Caraway seeds are fundamental to Central European and Scandinavian cuisines, particularly in German, Austrian, Polish, and Russian cooking. They appear in rye breads, sauerkraut, sausages, and cabbage dishes, where their warmth complements fermented and hearty preparations. The seeds are also used in liqueurs (such as Kümmel), cheese production, and pickling spice blends. In Indian cuisine, caraway is employed in some regional spice mixtures. The seeds are typically toasted lightly before use to enhance their flavor and are often crushed to release essential oils, though they may also be used whole for visual presentation and subtle flavor distribution.

Country Pork 'n' Sauerkraut

This recipe comes from Taste of Home Grandma's Favorites and was submitted by Donna Hellendrung. I like the recipe but I think I would use unsweetened applesauce and a little less than what is called for and also cut the brown sugar in half..
