Baking cocoa is an unsweetened powder derived from fermented, roasted, and ground cacao beans (Theobroma cacao) with most of the cocoa butter removed during processing. The residual cocoa solids are then dried and ground into a fine, dark powder. This ingredient originates from cacao cultivation in Mesoamerica and is now produced globally, with major production in West Africa, Ecuador, and Indonesia. Baking cocoa typically contains 10–12% cocoa butter and 50–80% cocoa solids, resulting in an intensely bitter, complex flavor profile with notes of earthiness and slight acidity.

The two primary processing methods—Dutch processing (alkalizing) and natural processing—produce distinct products. Dutch-processed cocoa has a darker color, more neutral pH, and smoother flavor, while natural cocoa retains higher acidity and a more pronounced cacao flavor. Both are distinct from cocoa powder used in beverages, which may contain added sugars and stabilizers.
