Fattoush
Fattoush is a Lebanese salad, good for hot weather. The recipe uses two unusual ingredients: sumac and purslane. Sumac, usually sold ground, is ground red berries and used in Middle Eastern, particularly Lebanese, cooking.

Preheat your oven to 375°F (190°C). Cut or tear the pita rounds into bite-sized pieces, brush lightly with olive oil, and spread them on a baking sheet.

Bake the pita pieces until golden and crispy, turning once halfway through. Remove from the oven and set aside to cool.

Chop the romaine lettuce and any additional lettuce into rough pieces and place them in a large salad bowl. Slice the cucumber, tomatoes, green bell pepper, green onions, and onion into bite-sized pieces and add them to the bowl.

Finely chop the flat-leaf parsley, cilantro, mint, and any additional herbs, then add them to the vegetable mixture.

In a small bowl, whisk together the lemon juice, olive oil, minced garlic, sumac, salt, black pepper, and a small amount of water to create the dressing. Adjust seasoning to taste.

If desired, mix a small amount of cornstarch with water and briefly simmer the dressing in a saucepan to thicken it slightly, then allow it to cool before using.

Add the toasted pita pieces to the salad bowl, then drizzle the dressing evenly over the entire salad. Toss everything gently to combine.
