Pineapple Pork Patties

- soft sandwich rolls8 large
- canned pineapple8 slicesdrained well (or use 2 cups drained pineapple chunks)

Combine ground pork, egg, minced garlic, finely chopped onion, seeded and finely chopped green pepper, and pepper in a large bowl, mixing gently until just combined.

Divide the pork mixture into 8 equal portions and shape each into a flat patty about ½ inch thick, making sure each patty is slightly larger than the sandwich rolls.

Heat a large skillet over medium-high heat until hot, then add the patties in batches without crowding the pan.

Cook the patties for 4-5 minutes on the first side until browned, then flip and cook for an additional 4-5 minutes until cooked through and no longer pink in the center.

Transfer the cooked patties to a plate and keep warm while finishing any remaining batches.

Toast the sandwich rolls lightly in the same skillet or on a toaster, turning once if using the skillet.

Place one pork patty on the bottom half of each toasted roll, then top with one pineapple slice.

Close the rolls and serve immediately while warm.
