Method

Heat olive oil in a large skillet over medium-high heat. Add the finely chopped onion and cook for 3-4 minutes until softened and fragrant.

Add the chopped chicken thighs to the skillet and cook for 5-6 minutes, stirring occasionally, until the chicken is lightly browned on the outside.

Stir in the diced smoked sausage and minced garlic, cooking for 1-2 minutes until the garlic is fragrant and the sausage is heated through.

Sprinkle the dried thyme leaves and black pepper over the mixture, then stir in the tomato paste and water until well combined.

Add all three cans of rinsed and drained great Northern beans to the skillet and stir to combine all ingredients evenly.

Reduce heat to medium and simmer for 20-25 minutes, stirring occasionally, until the chicken is cooked through and the flavors meld.
