Ingredients
- small dried pasta shapes10 ozsuch as twists or small shells
- pkg. baked marinated tofu (any flavor)8 ozfinely diced
- stalks celery2 largefinely diced
- scallions2 mediumthinly sliced

Method

Bring a large pot of salted water to a boil, then add the dried pasta shapes and cook until al dente according to package directions.

While the pasta cooks, finely dice the baked marinated tofu and set aside in a large mixing bowl.

Finely dice the celery stalks and thinly slice the scallions, then add both to the bowl with the tofu.

Add the soy mayonnaise and chopped black olives to the bowl, then stir to combine.

Season the mixture with salt and freshly ground pepper, tasting and adjusting as needed.

Drain the cooked pasta in a colander and rinse briefly with cool water to stop the cooking process.
